This wine is fermented cold and slow to retain bright fruit aromas, then aged in a combination of stainless tank and neutral barrels on the yeast lees for about 4 months. To preserve acidity we do not allow mallow lactic fermentation to occur. The resulting wine is a bright, clean expression of citrus and peach aromas with a tangy and refreshing palate.
Our Carneros Select Chardonnay is bright with citrus, pear and Granny Smith apple aromas. The finish has a hint of sur-lies creaminess and hints of stone fruit.
Delicate flavors are preserved through whole-cluster pressing. Prolonged yeast contact adds both texture and subtle toast aromas. Stone fruit and citrus aromas are accented with a hint of sur-lie character. This Chardonnay has a lovely refreshing acidity, with a long pleasing finish and will pair well with seafood, quiche and chicken.
