The Gavin Vineyard is comprised of two small blocks on the Napa side of the Carneros Appellation. These low-yielding vines produce wines with concentrated flavors. We harvest into small bins, and whole-cluster press the grapes to minimize handling. Barrel fermentation with an array of yeasts creates complexity while preserving the inherent character of the fruit. Extended sur-lie aging adds richness and toast flavors to the wine, while stirring the lees helps integrate oak notes with the fruit. The result is a bold and complex wine with forward citrus and Granny Smith apple notes layered with yeasty toast and hints of sweet oak in the finish.
